    Garden Fresh Pasta

    RECIPE Garden Fresh Pasta Soy Curls™ are a delicious addition to many recipes. Try some of our recipes or email your favorite to so we can share it!
    1 package linguine (12 oz.)
    2 tsp. salt (in boiling water)
    Boil until tender - drain and set aside

    1/2 package Soy Curls™ (4 oz.) (approx. 2 1/2 Cups), cover with warm water, and soak for approx. 10 min.
    3 cloves garlic, minced
    3/4 cup onion, chopped
    10 fresh mushrooms
    1 fresh lime
    4 Tbsp. olive oil
    2 tsp. salt
    2 Tbsp. Braggs Liquid Aminos, or soy sauce
    1 cup soy cheese (or feta, grated parmesan, or romano)
    3 roma tomatoes, chopped
    1 jar marinated artichoke hearts (6.5 oz.)
    1/2 can (3 oz.) olives, chopped

    In saucepan saute garlic, onion, mushrooms, drained Soy Curls™, fresh lime juice, and olive oil.

    Add salt, soy sauce, and simmer until onions are tender.  Turn burner off, and add tomatoes, artichoke hearts, and olives.  Pour over pasta, add cheese, and toss.

    Serves 6.
